Banana and Avocado Muffins (sugar AND oil FREE!)






Makes 15 muffins
You will need:
1/2 cup mashed Avocado
1/2 cup mashed ripe bananas
2 large eggs
1/2 cup soya milk
2 wholegrain flour 
3/4 cup honey
1 teaspoon baking soda
1 teaspoon salt

Step 1:

Heat oven to 180c and grease 14 muffin tins


Step 2:

In a large bowl, mix avocado, bananas, eggs and milk. 



Step 3:

In a separate bowl, whisk or sift together flour, sugar, baking soda and salt. Stir into avocado mixture.


Step 4:

Spoon batter into prepared muffin tin; bake 15 to 20 minutes or until tops start to brown and a toothpick inserted into a muffin comes out clean.
