Salad Niçoise



This recipe is based on a traditional salad Niçoise, however I replaced the potato with avocado as avocados are incredibly nutritious, for example 100g contain 26% of the RDA of vitamin K! (source) I also used more tuna instead of both tuna and sardines, this is simply due to the fact that I didn't have and sardines in the house!

Serves 1
you will need:
1/2 tomato
1/4 avocado
lettuce
1/2 can tuna 
handful of green beans 
1 egg
Balsamic vinegar 

Step 1:
Bring a large pan of water to the boil. Add the egg and cook for 5 mins. 




Step 2:
after 5 minutes tip in the green beans and cook for a further 4 mins.





Step 3:
Drain the beans and egg in a colander under cold running water until cool. Leave to dry.


Step 4:
Peel the egg and cut into quarters. 

Step 5:
Arrange the lettuce leaves in a bowl. Scatter over the beans, avocado, tomatoes and egg quarters. 

Step 6:
Flake the tuna into chunks and scatter over the salad. Drizzle with balsamic vinegar and serve.
