Tuna and Red pepper on Rye Bread


I have recently discovered rye bread and have spent a lot of time reading up on it's benefits, for example one study carried out by the Scientists at Lund University in Sweden found that rye bread produces a low insulin response and suppress hunger which is extremely useful in the fight against diabetes, (source).


In many studies, eating whole grains, such as rye, has been linked to protection against atherosclerosis, ischemic stroke, diabetes, insulin resistance, obesity, and premature death, this is because whole grains are concentrated sources of fibre.(source).100g of rye bread can have up to 6g of dietary fibre, where as 100g white bread only contains around 2.7g! (source).

HOWEVER!!! be warned; just because it says Rye bread it doesn't always mean it is! you need to make sure you read the back of the pack, many suppliers of rye bread only use a very small amount of rye along with a lot of bog standard flour so make sure you compare the percentage of rye. (Mine is 56% rye, not great.. but a lot better than some rye bread producers)

The tuna acts as a great source of omega-3 which is needed for aspects such as controlling blood clotting     and building cell membranes in the brain, and since our bodies cannot make omega-3 fats, we must get them through food. Omega-3 fatty acids are also associated with many health benefits, including protection against heart disease and possibly stroke. (source)
