Serves 2
You will need:
400g sweet potato (about one medium)
1egg
1tsp cinnamon
salt
60g flour (this is a slight guess, it depends on the level of water in your potato so you may need to adjust the amount, read step 5 /6 for more information)
1tsp olive oil
spinach an walnuts to serve with
Step 1:
Bake the sweet potato in the oven at 180c for around about 45-60 minutes until it is soft and you can easily push a fork through.
Step 2:
Take out the oven and leave to cool for 15 minutes
Step 3:
Scrape out the centre into a bowl and discard of the skins (I ate them, they tasted like vegetable crisps, yum!)
Step 4:
Mash the potato and add the cinnamon, salt and egg then mix.
Step 5:
Add the flour, just enough so that you can handle the dough, it sill still be extremely soft and sticky.
Step 6:
Put the dough on a flowered surface and roll out into a sausage shape. (You may need to add a little more flour here if it become too sticky) I would have ideal used whole grain flour to increase the fibre in my diet but I am yet to find any in my local supermarket so I had to use whit flour :(
Step 7:
Cut the sausage into gnocchi sized pieces
Step 8:
Bring a pan of water to boil. add the gnocchi and cook for 5(ish) minutes until the gnocchi begins to float
Step 9:
Drain the water, try not to let the gnocchi touch too much as they may still be sticky
Step 10:
Heat the oil in a frying pan and then add the gnocchi, cook until golden brown.
I served the gnocchi with a spinach and walnut salad as spinach contain a high amount of iron which is important for combating anaemia.
